Fireside dinner menu # 29 – the holiday highlight edition

To make up for my silence, I will be enticing you with a menu fit for any holiday. Apologies to those who have decided to only eat salad in January.

The stuffed pork neck was a wonderful surprise and loved by all (especially the cook because it was easy AND budget-friendly). Also featured today are Hasselback sweet potatoes, Trinchado, Bobotie burgers and baked meatballs. I did these with beef instead of lamb. The tomato risotto has been posted before, but I am sharing it again, because it might just be my favourite side.

Fireside Dinner Menu # 24

This week’s menu has a lot of happy moments but my personal favourite was the paprika potatoes. You have to try them – I think you will want to braai them with everything.

My cornbread crust did not come out quite crusty enough, so please let me know if you managed to make it look like in the pic of the website!

The sliders came out beautifully as well, I did however assemble them and then baked them in the oven for a while as well. The slow cooker is your friend for the pulled chicken!

Fireside dinner menu # 20 – the meat-free edition

I think together with new year resolutions and attempts to reinvent ourselves, there is definitely a trend currently to have a few meat free meals per week. We have not yet gone there, but I did chat to a friend this morning who said that they have now incorporated this into their weekly meal plan.

Cyclone Eloise has brought wet weather to our parts and soup and curry is definitely back on the menu this week!

Fireside Dinner Menu # 18

So this week I am posting “off site”. We are blessed to be on our December holiday in the Eastern Cape. Scroll down to download the file with the links to some of the recipes.

The menu this week has a lot of ambitious efforts of which the highlight is probably Jan Braai’s carrot cake. It is as fantastic as it sounds, and I am thinking we might try it for our Christmas dinner as well.

I clearly also had a coconut milk theme going this week!

Fireside dinner menu # 17

This week features a lot of sweet potatoes because I had a craving. We also cleaned out all the extra’s from the freezer so yes, Wednesday night’s dinner came from a box…

Thursday night introduced me to a mac ‘n cheese braaibroodjie. Do not knock it until you’ve tried it, you will not be sorry!
